Getting Ready for Thanksgiving with me!

Thanksgiving is right around the corner! Thanksgiving is a time to share with family and friends. At our house we tend to keep it simple. Our family likes to make one giant salad, rice, beans, turkey, ham and some potato salad. Everyone cooks and we each bring a plate. I like to make the salad. This salad is very easy to make. I also like to add some chia seeds over my salad.

My special Salad Dressing:
-2 tablespoon of Apple Cider Vinegar
-1/3 cup of olive oil

Mix together and sprinkle over your salad and enjoy! 




The Second Salad:
2 Cups chopped lettuce
1/2 Can of Heart of Palms
1/2 cup of Roma Tomatoes
1/2 Onion
1 stick of mozzarella cheese

Mix your salad together.

Pasta

You may add hard-boiled eggs, chicken or beef it is totally up to you.

Today I decided to make some pasta and I didn't have any pasta sauce. The only thing close to pasta sauce in my pantry was tomato paste. So what did I do? I made my own with the tomato paste that I had. The spaghetti I used for this recipe was gluten free, but you all are welcome to make it with any spaghetti you like. 

Ingredients:

1-package of store bought spaghetti(can be gluten free or regular)
 2-cups of water
4-eggs





 For the Sauce:

1- 6oz can of tomato paste 
1/4-cup of olive oil
1- finely chopped garlic
2- tablespoons of minced garlic
1/4-of white onion
1-teaspoon of finely chopped basil leaves 
1 1/2-teaspoon of organic cane sugar
 1 or 1/2- cup of water
2 1/2- teaspoons of salt

Preparation:
For the sauce you want to first fry the garlic in the olive oil until it is golden brown in color. After you have fried the garlic you add the chopped onion(keep mixing the ingredients so they don't burn). Next you want to add all other ingredients including the tomato paste. Keep mixing all the ingredients until your tomato sauce has a creamy texture(you will have to add 1 cup of water in order for it to have a creamy texture). Once you are done with the tomato sauce you can begin cooking your spaghetti and eggs.

Chicken Parmesan



Chicken Parmesan

For Chicken:

1 cup bread crumbs
1/2 cup flour
3 egg whites
1/2 cup italian seasoning
Salt(add amount preferred)
1 can of tomatoe sauce(Cento chef's cut was the one I used)
3 slices of Muenster cheese
 4 slices of chicken breast

In one bowl add the flour,in another add the egg whites and a third bowl add the bread crumbs. Dip the chicken in the egg white, flour, bread crumbs.( if bread crumbs do not stick to chicken you may need to add some more egg whites) Set the chicken in the pan  and bake in the oven until chicken is golden brown. Next, you want to add the tomato sauce, Italian seasoning, salt  on the chicken. Then you top it off with the cheese. Put the chicken back in the oven for about 10 min or till cheese melts. 

For Pasta:
1/2 whole garlic
4 tbsp of olive oil
2 pinches of salt

Grab a pan add water and let the water reach boiling point. Once water has reached its boiling point you want to add the pasta,and let cook till it's Al dente. Then you want to drain the pasta by putting it in the drainer. Next, add crushed garlic with salt, and olive oil in the pan you used for the pasta. Fry the garlic till golden brown when you are done frying the garlic add the pasta and mix the garlic with the pasta.
